I founded Taco Taco in Monteverde in 2009 and grew it to approximately US$1 million in annual revenue for two consecutive years. I built its service standards, menu, team, purchasing practices, and operating routines.
At Killer Restaurant Group, I developed and opened Taco Taco Avellanas, Mucha Lucha Avellanas, and El Trompo Junquillal during the 2022–2025 expansion. At peak scale, the group operated three restaurant locations and employed approximately 50 people; I also developed procedures and role-based training guides for service, kitchen, production, and leadership teams.
I co-founded Pensión Tejas, the operating company for Pensión Santa Elena, a 36-room adventure-travel hotel owned from 2004 to 2023. I’m interested in operations roles where practical restaurant experience, clear systems, and strong follow-through can help a team grow, and I’m open to remote opportunities and the right in-person role.
