Launched a frozen Italian puff-pastry pizzetta brand for coffee shops, food service and retail. Set up BRCGS-accredited contract manufacturing, UK cold-chain logistics, a national distributor and a sales agency.

Reported directly to the CFO, covering all commercial finance for operations and franchise across an 80+ shop, £120m+ estate. Led commercial analysis, cut labour costs by over 2% through TPLH analysis, and reported weekly trading figures to the Board.

Led 50+ high-volume shops and 400+ staff across London through a team of Operations Managers and Area Leads. Owned full P&L and EBITDA of £65m+ in sales, won Best Area five times, and built a strong succession pipeline with the lowest staff turnover in the company.

Managed itsu's innovation shop in Islington, trialling new procedures and building the delivery system. Won Best of itsu four times and was runner-up twice.

Led end-to-end openings of high-volume fast-casual restaurants in Central London, from build handover to stable trading. Coordinated fit-outs, suppliers, recruitment and training to get new sites trading profitably within 60 days.

Built the operating model for a start-up fast-casual concept, including kitchen layout, food safety systems and shift routines. Proved the prep and labour model during pilot trading to support rollout.

Assisted in managing restaurant operations, ensuring service quality and efficiency.

Managed a bookshop and owned a restaurant, bar and lodge in Sardinia.

Completed a Master of Arts in Philosophy and History.

Studied European Integration as part of academic exchange or additional studies.
