What I'm looking for

I’m seeking a Research Scientist role where I can turn evidence-based formulations into commercially viable nutraceutical and health-supplement products.

At Avinashilingam Institute for Home Science and Higher Education for Women, I developed pH-responsive Gymnema sylvestre alginate beads, spheres and edible strips from plant waste biomass. I evaluated their physicochemical, nutritional, sensory and shelf-life properties; this work was published in Sustainable Food Technology, registered as a copyright and recognized with the Best Research Award at IUNS-ICN 2025.

My doctoral research also includes producing resistant starch from barnyard millet and profiling Coleus rotundifolius leaves, including ursolic acid quantification and enzyme inhibition testing. I combine in vitro assays with molecular docking to investigate the antidiabetic potential of plant bioactives.

I’ve developed edible films and coatings and evaluated their potential for shelf-life extension. I also contributed to a Fernandez Hospital consultancy project on nutraceutical-based medical nutrition therapy for women with gestational diabetes, and I’m seeking a Research Scientist role turning evidence-based formulations into commercially viable nutraceutical and health-supplement products.
