Role Overview
We are seeking an experienced Pitmaster to lead our culinary team in crafting exceptional barbecue and smoked dishes that reflect our unique brand identity. In this role, you will be responsible for overseeing the entire smoking and cooking process, ensuring that we deliver mouth-watering, high-quality meals that keep our customers coming back for more.
Responsibilities
- Master the art of smoking various meats, ensuring optimal flavor profiles and textures through meticulous attention to detail.
- Oversee kitchen operations, managing both the equipment and the team to ensure efficient and high-quality food production.
- Develop and refine recipes, employing innovative techniques to enhance traditional barbecue practices.
- Implement and maintain food safety and sanitation protocols, ensuring compliance with health regulations.
- Train and mentor kitchen staff in smoking techniques, flavor balancing, and presentation standards.
- Collaborate with the management team on menu development and seasonal offerings.
- Engage with guests to share knowledge about barbecue techniques and the unique flavors of our dishes.
Required and Preferred Qualifications
Required:
- 5+ years of experience in a professional kitchen, with at least 3 years focused on barbecue and smoking techniques.
- Strong understanding of different wood types and their impact on flavor profiles.
- Proven experience in managing kitchen staff and operations effectively.
- Ability to work in a fast-paced environment while maintaining a high standard of food quality.
Preferred:
- Culinary degree or certification in barbecue specialty.
- Experience in menu development and food cost management.
- Passion for barbecue culture and a deep understanding of regional styles and techniques.
Technical Skills and Relevant Technologies
- Expertise in operating various smoking equipment, including offset smokers, pellet grills, and vertical smokers.
- Proficient in using culinary tools and technology for food preparation and presentation.
- Knowledge of inventory management systems and food safety compliance tools.
Soft Skills and Cultural Fit
- Strong leadership abilities with a focus on team collaboration and motivation.
- Excellent communication skills, both verbal and written, with a customer-centric approach.
