Responsibilities

Required and Preferred Qualifications
Required:
- 5+ years of experience in meat curing or charcuterie, with a deep understanding of traditional and modern curing methods
- Strong knowledge of food safety regulations and best practices in meat processing
- Demonstrated ability to create unique flavor profiles and innovate within the meat curing process
Preferred:
- Culinary degree or certification in meat processing or charcuterie
- Experience with a variety of meats, including pork, beef, and poultry
- Familiarity with the latest trends in sustainable and ethical meat sourcing
Technical Skills and Relevant Technologies
- Proficiency in using curing equipment, such as smokehouses, dehydrators, and temperature/humidity control systems
- Knowledge of meat science, including the biochemical processes involved in curing and fermentation
- Experience with HACCP and other food safety management systems
