Role Overview

Responsibilities

- Manage inventory and ordering of sushi-grade fish and other key ingredients, optimizing costs while ensuring quality

Required and Preferred Qualifications
Required:
- 5+ years of experience in sushi preparation, with at least 2 years in a leadership role
- In-depth knowledge of sushi ingredients, techniques, and presentation styles
- Strong understanding of food safety standards and kitchen management
Preferred:
- Culinary degree from an accredited institution
- Experience in high-volume kitchens or fine dining establishments
- Proficiency in additional Japanese culinary techniques or other Asian cuisines
Technical Skills and Relevant Technologies
- Expertise in sushi preparation, including nigiri, sashimi, and maki rolls
- Familiarity with traditional Japanese knife skills and equipment
- Ability to create and implement effective kitchen processes and workflows
